Taco Salad

It’s a recipe you really can’t get wrong. You can add or subtract or substitute whatever you like to make it your own.

One beautiful thing about this meal is if a member of your family doesn’t like salads, you can pull out tortillas and they can make themselves an (American style) soft taco instead.

INGREDIENTS

1 lb ground beef (or turkey or chicken or tofurkey, whatever your thing is)

Taco seasoning

Tortilla chips, I like to crush mine, my husband likes his whole

Spinach (or Romaine or Ice Berg or Kale. We like Spinach, but that doesn’t mean you have to)

Avocado, sliced

Tomato, diced

Black olives, sliced if you like

Cheese, shredded

Sour cream (or plain Greek yogurt or whatever)

Salsa

*other options can be corn, black beans, onion.

** also there aren’t recommendations for how much of most things to use, because I don’t measure when I cook this. Typically we will use 1 handful of each thing per plate. Not a real science. Do what you like.

INSTRUCTIONS

1. Brown the meat.

2. Add taco seasoning. If the seasoning requires you to add water to the meat, go ahead and do that, too.

3. Throw it all on a plate or in a bowl and enjoy!

*we like to layer ours as follows: spinach, chips, beef, cheese, tomato, avocado, olives, sour cream and salsa.
